Verfrissende vegetarische fruitsalade met extra eiwitten

so apparently there are people out there who aren’t really hungry when the weather is hot. Not really something I can identify with because I’m part of #teamalwayshungry.
What about you?

Either way you should try this refreshing salad with some extra protein.
It’s a light fruit salad so it’s not too heavy on your stomach and again it’s soooo simple to make!

Only skill you need is cooking chicken and if you want to start eating healthy that’s… well that’s just a primary skill you need!

So let’s not waste anymore time and start cooking!

Refreshing fruit salad with extra protein

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 1 person


  • 100 grams grapes (seedless)
  • half a mango
  • 1 tbsp sour cream
  • 1 tbsp natural or greek yoghurt
  • 25 grams cashew nuts
  • 1 chicken breast
  • salt and pepper to tast
  • 1/4th lime for the juice
  • 1 handful of cilantro
  • 1 clove garlic finely minced


  1. Season the chicken and pan fry it. I chose to pan fry the chicken as a whole and then cut it. But if you want to fry it faster you can cut it into little chunks.

    You can do this a couple of hours or a day before

  2. Let it cool down to room temperature and place it in the fridge.

  3. Cut the mango and then  simply add all the ingredients (keep the cilantro for last) in a bowl along with the sliced chicken and mix well.  Season with salt and pepper.

    Top with the cilantro at the end then serve!
