This bacon salad is full of creamy avocado flavor mixed with salty bacon, now who wouldn’t be a fan of that?
This recipe is great for all seasons, but the freshness of the apple makes it extra refreshing.
Avocado bacon salad
- 75 grams bacon cubes
- 30 grams cucumber diced
- 1 small tomato diced
- 1 tbsp rice vinegar or lime juice
- 1/2 red apple sliced in parts
- 1 avocado diced
- 25 grams cashew nuts chopped
- salt and pepper to taste
- 1 handful cilantro optional, if you add it do it at the end on top of the salad
- 1 tangerine, cut
Turn on the pan to medium hot and add the bacon cubes. Meanwhile cut all the vegetables
Fry the bacon until it's really crispy, this could take up to 10 mins. Put you really want it crispy!
Some of these cubes are already smoked and salty so try to see if you need to extra seasoning
Mix all the ingredients in a bowl along with the bacon, taste and season if necessary. Don't forget the fat from the bacon!
